Seriously, This is a Muffin Top Worth Having

Found this amazing recipe on a great foodie site called, For the Love Of Cooking http://fortheloveofcooking-recipes.blogspot.com/ . I knew instantly this cookie and I would be very close friends. Turns out my gut instinct was correct and we are in love. These moist and terrific cookies as described in For the Love Of Cookie are just like a muffin top and that is a perfect description. I made a great big batch and let me tell you they did not last long in this house and I promise they won’t last in yours either.

Ingredients:

2 1/2 Cups Flour

2 Tsp Baking Powder

1/2 Tsp Salt

1/4 Tsp Baking Soda

3/4 Cup White Sugar

2/3 Cups Softened Butter

2 Eggs

1 1/2 Tsp Vanilla Extract

1 Cup Very Ripe Mashed Bananas (2 – 3)

1 Cup Milk Chocolate Chips

1/2 Cup Shredded Coconut – Sweetened

1/2 Cup Walnuts – Chopped up

Preheat oven to 375 degrees

Sift the flour, baking soda and baking powder, salt and set aside.

Mash the bananas until pretty smooth

Cream together until light and fluffy the butter and sugar then add in the eggs and the vanilla. Once those are all mixed add Bananas. After all these are well mixed add the dry ingredients and mix until just combined. Stir in chips, nuts and coconut.

Bake the cookies for about 10 – 12 minutes or until golden brown. Once out of the oven I took them from the cookie sheet and let them cool on a wire rack.
