2 new (to me) Paso Robles Wine Discoveries
A couple of weeks ago a few of us girls decided it was time to hit the “wine” trail. So we headed North to Paso Robles for the weekend. Since we had all been there many times in the past we decided to get out of our “winery” comfort zone and do some tasting at some new places. So glad we did! We hit 7 new (to us) wineries all together that weekend but a couple of them really stood out.
My favorite of the weekend! Thanks to an introduction from another great winemaker extraordinaire, Victoria Schmitt of “Volatus ~ http://www.volatuswine.com” is Aron Hill Vineyards (www.aronhillvineyards.com). Talk about timing! Ours was incredible ~ as they just opened their new tasting room on Highway 46 the very day we showed up. WOHOO lucky US! I must say it was love at first taste. I am not sure what she does to her Paso Juice but she nailed it. From the first sip I knew “Judy” (AKA owner incredible) and I were going to be very good friends! This small family vineyard produces wines that sucked me in from the very first sip! Their wines are big, full bodied, deep in color and full of rich fruit. The varietal that I can still taste is the “Primitivo”2005 Estate Grown Cabernet. OH MY that one could easily become a dangerous addiction!

The Second Winner of the weekend was Caliza (www.calizawinery.com) a small boutique winery located on Anderson Road. This winery is perfectly located next to a Paso giant called Booker. Caliza has a relatively small case production but let me tell you there is nothing small about this place ~ their wines are big and very tasty. While we tasted all 5 varietals they were offering 2 of them really stuck with me: “Sidekick” which is a white blend of Roussanne and Viognier and “Cohort” which is a red blend consisting of Syrah, Grenache, Primativo and Petite Sirah. The Sidekick is what I would say a perfect summer wine. The blend of flavors will pair nicely with my raft in the pool on a warm summer day. The Cohort ahhhh the Cohort this little gem is well good… anytime! This is one big wine that you can enjoy now with a big bad steak or in a few years with yet another big bad steak! Both were excellent and I am looking forward to visiting them again and again!

2. Psychiatrist: Of course, he’ll analyze whatever you give him so choose a wine that’s all about balance. Easy-drinking pinot noir is medium-bodied yet packed with flavor. Surprise him with a large-format bottle, like a magnum. Big thinking means big progress for you. This wine also works for psychologists, marriage counselors and bartenders.
3. The Boss: Pick too pricey a wine and your boss will think your last raise was too much; go cheap, and she’ll think you lack judgement. Focus on a label with a lot of white space since that makes the bottle look more expensive. A castle in the distance also works, but avoid fluffy animals.

9. Mechanic: Yes, there’s a wine called Red Truck, but try to be more imaginative. Why not give a wine made by Mario Andretti in California or Ferrari in Italy?

Wine Terminology… Always helpful to know!
Here are the top 10 wine terms according to www.eBacchus.com. These are very helpful especially when you hit the tasting rooms or social events and want to sound like you know what you are talking about
Aroma
The intensity and character of the aroma can be assessed with nearly any descriptive adjective. (eg: from “appley” to “raisiny”, “fresh” to “tired”, etc.). Usually refers to the particular smell of the grape variety. The word “bouquet” is usually restricted to describing the aroma of a cellar-aged bottled wine.
Balance
Denotes harmonious balance of wine elements – (ie: no individual part is dominant). Acid balances the sweetness; fruit balances against oak and tannin content; alcohol is balanced against acidity and flavor. Wine not in balance may be acidic, cloying, flat or harsh etc.
Crisp (Whites)
Wine has pronounced but pleasing tartness, acidity. Fresh, young and eager, begs to be drunk. Generally used to describe white wines only, especially those of Muscadet de Sevres et Maine from the Loire region of France.
Finish
Term used to describe the taste left in the mouth after swallowing the wine. Both character and length of the aftertaste are part of the total evaluation. May be harsh, hot, soft and lingering, short, smooth, tannic, or nonexistent.
Fruity
Used for any quality that refers to the body and richness of a wine made from good, ripe grapes. A fruity wine has an “appley”, “berrylike” or herbaceous character. “Fruitiness” usually implies a little extra sweetness.
Smooth / Soft (Velvety)
Generally has low acid/tannin content. Also describes wines with low alcohol content. Consequently has little impact on the palate.
Spicy
Almost a synonym for “peppery”. Implies a softer, more rounded flavor nuance however.
Structure
The flavor plan, so to speak. Suggests completeness of the wine, all parts there. Term needs a modifier in order to mean something – (eg: “brawny” etc).
Tannins (Reds)
A naturally occurring substance in grapeskins, seeds and stems. Is primarily responsible for the basic “bitter” component in wines. Acts as a natural preservative, helping the development and, in the right proportion, balance of the wine. It is considered a fault when present in excess.
Taste
Refers to the basic sensations detectable by the human tongue. Current scientific opinion defines these as “sweet”, “salty”, “sour”, “bitter” and “MSG” (Monosodium Glutamate) flavors all registered by the tongue taste receptors. The traditional view of the tongue having four distinct surface zones to register those tastes has recently been revised by a report of new research discoveries.

I love this wine – I really wanted to write a specific review on my favorite varietals but I found that impossible because I PRETTY MUCH LOVE THEM ALL! My New Hubby and I stumbled upon this winery about 4 years ago (we just started dating then) & (literally stumbled) and just fell in love with every wine that hit our lips. One wine really struck us not only because of how wonderful and smooth it tasted but because of the name, “SOULMATE”(new couple thing – I know oh how cute!!) Side note we bought more cases than our trunk could hold but we saved until our Wedding night the very last bottle of Soulmate that we bought on that first trip in 2005.
This is a family winery and the young, adorable and award winning hotshot wine maker “Joe Barton Jr” is amazing – They have an Old World Wine Making Philosophy – They are very hands on and use only French Oak Wine Barrels and American Oak Wine Barrels. All their wines are crushed, barreled and bottled on the estate.

Silkwood 2004 Syrah.. Oh My, This was incredible

Cracked a bottle of this baby the other night and it was smooth as silk. Dinner that night was a wonderful New York Steak with a gorgonzola cream sauce and it seemed appropriate that a big bad red wine went with dinner. This one did not dissapoint, WOW. From the moment it was uncorked you could smell all the richness in the bottle. This is one big wine with one smooth finish… This gold medal winning wine will continue to get better and better. Aged for 26 months in a French barrel this one easily has aging potential of 9 or so years. It was so good now that I am not sure it is possible for this to get better!! One Helluva Wine Night
Well as many of you know I had the pleasure of having Chef Lance Toro along with Kristy and her crew over for dinner a couple weeks ago and all I can say is Oh What A Night!! I must say I was a little nervous cooking for a Chef but thankfully I stuck to a couple favorites dishes that over the past few months I got very comfortable cooking. Was not going to risk cooking something new
The food was great and I served a couple of my favorites – Salmon with black bean and corn relish.

and Black Bean Chilaquile and a Beer bread with corn. Lance surprised up and whipped up a great summer salad with a lemon vinaigrettedressing. Chef Lance Toro will be launching his website soon where you will find great recipes and when he goes on tour with Christina Aguilera this summer he will chronicle life on tour!

Saving the best for last THE WINE of the Evening!!
Keeping in mind there were 6 of us we felt it was only fitting to drink 6 bottles of wine – 1 for each of us was only fair right!! I know that typically you would pair white wine with fish but we are all red drinkers. The one thing about wine is that you are never wrong if you like it you are right – I mean come on where else in your life are you always right?? That’s what I thought nowhere! Here is what we enjoyed that night and let me tell you every DAMN bottle was Kick ass! We drank wines from: Leona Valley, Volatus, Martin Weyrich and William Hill.
