Great Holiday Side Dish – Chipotle Mashed Sweet Potatoes

Cheddar Chipotle Sweet Potatoes

This was one of those recipes where it was love at first site. I came across this in the Bristol Farms Real Food Magazine and knew this one would be a winner. Not only was I intrigued by the unique flavor combination but I also loved how simple this was. I wanted to especially give this one a try to decide whether it was worthy of sharing with the family during the holiday… It was :)

The following recipe serves about 6 – 8 if they do not go back for seconds or thirds {{LOL}} they will…

3 lbs of Sweet potatoes, peeled and cut into 1″ dice / cubes

1/2 Cup of UN-Salted Butter

3 Tablespoons Minced Garlic

1/3 Cup Heavy Cream

1 Cup Sharp Cheddar Cheese, Shredded

4 oz Cream Cheese , room temperature and diced

2 Tablespoons Chipotle Chile’s in adobo sauce, Chopped fine

To Season: Kosher or Sea Salt and Fresh Ground Pepper

Cook the potatoes in a large pot of boiling salted water (20 plus minutes). Drain well. Return potatoes to pot and cook, stirring for a minute over medium heat to “dry out” the potatoes.

While the potatoes are cooking or “drying out”, warm butter in saucepan over medium heat. Add garlic and cook until lightly browned (a couple minutes) Stir in the cream to heat through.

Crush with a potato masher until smooth. Add cheddar cheese, cream cheese, chipotles and cream mixture. Stir to blend well. Season with salt and pepper to taste.
Serve warm and Enjoy.

Legally speaking this is still a No No.

I was cruising through my some magazines and ran across this blurb from More Magazines October issue.  Who would have that in over 20 states laws still exist against cheating? Here are a few examples that were pretty wild  but on the other hand not too shocking that laws like this still “quietly” exist.

Minnesota: It is illegal for a woman to stray from her marital bed, but a man can get off scot-free.

Idaho: A dalliance is punishable by up to 3 years in prison.

Michigan – Fooling around is a felony that could get you life in prison

Florida: Have an affair in the Sunshine State, and you could face some heat: up to six months in jail or a fine of $500.00 buckaroos!

West Virginia: Convicted phianderers “shall be fined not less than twenty dollars” ATM’s beware

New Hampshire: From 1679 – 1973 adulterers faced whipping; now the misdemeanor comes with a fine of up to $ 1,200.00 (what did people like the whippings ::wink wink:: )

Mississippi: In 2008 a millionaire was ordered to pay $ 750,000.00 to the Man whose wife he wooed away.

North Carolina: In March, under the “alienation of affection law” a woman named Cynthia Shackelford sued her EX-husbands bedmate and won $9 million!!

Do you know of any weird “old” laws that are still on the books that we would find archaic yet in a court of law would still hold up?  Do Share!!!

Elections are over – Now what?

OK so this is not going to be a political rant or a party rant as I am really not in love with one party over the other.  I am more of a people and policy type voter.  This is more of a plea to those who were just elected: Please stop all the BS, finger pointing and mud slinging and get to work.  We elected you to work on behalf of the people not for your own gain.  It is time for you to step up to the plate and go to work for US the American people who voted for you.  Now is the time for positive change well,  because DAMN do we need it.

Here is my DAMN question if you were elected what would be top on your list to address, reform and or fix?
