Yummy and Simple Turkey Taco Casserole
Hubby and I have been on a Mexican food kick, especially anything that cooks in one dish and yields leftovers! This baby covers all basis and is amazing! It has also become a once a week dinner staple in the house! Actually I have made this 3 times in the past 3 weeks and every-time I change it up just a smidge. SO far I have not been disappointed with any version! This is one of those recipes that you cannot mess up!! I hope you enjoy this as much as we have!! Oh and did I mention it is a quickie too!!


Turkey Taco Casserole
- Approx 24 tortilla chips
- Frozen Corn 1 cup or 1 can of sweet corn
- Red / Green / Yellow peppers cut up to taste
- 1 can Bush’s bake grillin beans “fiesta flavor”
- 1 pound ground Turkey
- 1 Tablespoon Olive Oil
- 1 package of Lawry’s taco seasoning
- 1 cup salsa
- 1 cup shredded Mexican blend cheese
- Garnish – Sour Cream and Avocado
Heat oil in a large skillet add Turkey meat and taco seasoning. Cook, breaking up meat with a spatula, for about 5 minutes. Add beans and salsa. Mix well and continue to cook until salsa thickens.
Line the bottom of a large baking dish with tortilla chips, pressing down on them lightly to break them into bite-sized pieces. Spread the meat and bean mixture over the chips and top with cheese. Stick a few extra tortilla’s on top! Bake for 20 minutes in a 350 degree oven and /or until cheese is melted and bubbly. Scoop up and garnish to taste.
Alternate Variations and Suggestions
Ground Beef or Chicken instead of Turkey!
Use the left overs to make burritos!
Spice it up with Chipotle or Jalapeno’s
Plain Black Beans
