
I have always wanted to make homemade granola so a couple months back I reached out to Kevin at www.closetcooking.blogspot.com and Grace from http://asoutherngrace.blogspot.com/ for some suggestions. I was also inspired by a recipe I came across on http://tastespotting.com by a wonderful foodie www.ourkitchensink.wordpress.com and in the end I blended together all these great recipes they provided along with a few changes and come up with my own. What I came up with is amazing… I could kick myself in the backside for not making this sooner. Not only is the flavor off the charts but it was so easy and I will have enough to last for awhile. The other great thing about this is that I literally had all the items in the pantry (and fridge)
Cathy’s Cranberry and Mixed Nuts Granola - with alittle a lot of help from my friends
3 1/2 Cups Rolled Oats - I used the quick oats
1 / 2 Cup Sweetened Coconut Flakes
3 Tablespoons of Flax seeds
1/2 Cup slivered raw almonds and a handful of hole ones
1 Cup Halved Walnuts - I did not chop these up
1 Cup Chopped Pecans
1 Tablespoon of Cinnamon
1 Teaspoon of Sea salt
1/4 Cup “Enova” oil or canola oil is fine
1 Tablespoon of Agave Nectar
2 Tablespoons of Pure Maple Syrup
2 Tablespoons of Honey
1 Tablespoon of Almond Extract
2 Cups dried Cranberries
Preheat the oven to 375 degrees - I used the convection setting on mine. Place all the yummies in a large bowl EXCEPT for the cranberries. Mix well. Place mixture on a rimmed baking sheet (I could have easily used 2) that is lined with foil bake for approx 30 - 45 minutes mixing about every 10 - 15 minutes. I like mine pretty golden in color so I left it in for closer to the 45 minute mark. Once you get your desired golden color remove from oven and let cool for a few minutes before adding in the cranberries.
After a few test tastes I decided to see how this would taste over Fage Greek Yogurt. Kick ass is the best description - this will be the breakfast of choice for awhile that is for sure.

Ohh..yum..I too have been wanting to make Granola..but for some reason I never get around to it. I guess I just dont have time for all that healthy junk!!!LOL

That granola mix sounds good! I like the flavour combinations. Homemade granola is pretty easy and fun to make.

Sounds good! I also love the Fage Greek Fat Free Yogurt or the Trader Joe’s brand. It is so rich for something fat free. And the idea of homemade granola so that you know what is in it and what kind of sugars are being used is so cool.
(I am trying so hard to avoid high frustose corn syrup!)
